Baked Chicken

four servings
  • 1 chicken, fryer or roaster

Wash whole chicken. Remove giblets and dispose. Salt and pepper inside and out. Place in roaster or other pan that can be covered. Cover bottom of pan with one half inch water. Bake 2 hours at 350°.

Variation: Peel 12 clove garlic. Place inside and under the skin of the chicken before cooking. Make small cuts in the skin and insert cloves.

Variation: Sprinkle liberally with rosemary, sage, and thyme. Dust with 2 tablespoons chopped parsley.

You can use individual pieces or chicken or a turkey breast as a substitute for a whole chicken.

Chicken Breasts

four servings
  • 4 chicken breasts
  • 1 clove garlic, pressed
  • 2 lemons, juiced
  • 1/4 cup olive oil
  • salt and pepper

Wash breasts removing any excess fat. Combine other ingredients. Place breasts on broiler pan or grill. Brush with marinade and broil for 25 minutes. Turn every 5 min and brush again with marinade.

Variation: Add rosemary, thyme or other spices.

Hot Artichoke Dip

six servings
  • 1 cup mayonnaise
  • 1 cup grated parmesan cheese
  • 14 oz. artichoke hearts, drained, rinsed, and chopped
  • 4 oz. green chili, drained
  • 1 clove garlic, pressed

Combine all ingredients. Cook in pie plate or other dish at 350° for 20 min. Serve with tortilla chips or pita slices. May be garnished with black olive and or tomatoes, chopped. Serve warm.

Spinach Lasagna

  • 8 oz. lasagne
  • 4 cups tomato sauce
  • 8 oz. grated mozzarella cheese
  • 4 oz. grated parmesan cheese
  • 1/4 tsp. red pepper flakes
  • 8 oz. large curd cottage cheese
  • 1 egg
  • 1 package frozen spinach, thawed, drained, all water squeezed out by hand
  • 1 tsp. salt
  • pepper to taste

Prepare pasta. Mix all cheeses, egg, salt and peppers. Add spinach. Mix together. Place small portion of sauce on bottom of 9x13 dish. Make layer of noodles. Make layer of cheese mixture. Cover with layer of sauce. Repeat. Repeat. Cover with noodle layer and finish with layer of sauce with additional parmesan and mozzarella cheese. Bake 45 min. at 350°. Cool 10 min. before serving.

Hint: I use a tomato basil sauce. Cheese proportions can be varied. Try some basil in the cheese too.
